Young Nebraska Scientists (YNS) conducted by Nebraska EPSCoR with funding from the U.S. National Science Foundation (NSF) - offers camps for middle and high school students throughout the state. YNS experiences focus on Science, Technology, Engineering and Math (STEM) topics, and are a great way for teens to sample a career, meet friends and mentors, and find their future! NSF fundings helps keep YNS camp fees low; and need-based scholarships are readily available. Faculty from Nebraska colleges and universities are camp leaders, and camp staff include university students. This is a hands-on, two-day food science camp where students explore how simple, recognizable ingredients can be intentionally processed into smart, functional snacks. Working in a clean, design-focused lab environment, students deconstruct apples to understand their structure, transform them using different processing methods, and reflect on how food design choices affect health and sustainability. This camp is ideal for students curious about food science, clean-label products, sustainability, and how everyday snacks are engineered with purpose. This camp is sponsored by the Kimmel Foundation. Camp fee is $40. Apply: https://yns.nebraska.edu/gain-hands-on-experience-in-stem/summer-camps. Early application deadline is May 1. Priority is given to high-school students. After May 1, middle-school students may apply, if space is available.
